We use a specially designed, three ply foil bag with a one way de-gassing valve. The valve allows the natural gasses produced in the roasting process to escape while not permitting air to enter the bag. This allows us to package the coffee fresh from roasting. Additionally, we vacuum the air from the bag and gas flush with nitrogen, greatly extending the shelf life of our coffees. Nitrogen gas is used in many food processes to preserve products without the use of chemicals.
Natural carbon dioxide produced in the roasting process is what gives coffee its freshness. This is also why it is better to not grind the coffee until just before use, to preserve the gases and flavor trapped inside the bean.
